I am not a big pasta fan, But I must admit that Vegan pasta parmesan is a delicious and satisfying meal that is perfect for any occasion. The creamy, savory sauce coats the noodles perfectly, making every bite a taste sensation. The nutty flavor of the cashews combines with the savory nutritional yeast and the aromatic spices to create a sauce that is rich and flavorful. The optional vegan parmesan cheese adds an extra layer of depth and umami flavor, making this dish a true taste masterpiece. All I can say is "Yes Lawd, it's quick, easy and delicious!!


One of the great things about vegan pasta parmesan is that it is so versatile. You can use any type of pasta you like, from spaghetti to fettuccine to penne. You can also add in your favorite vegetables, such as steamed broccoli or roasted cherry tomatoes, for added nutrients and flavor. Whether you're a vegan or just looking for a delicious plant-based meal, this vegan pasta parmesan is sure to become a new favorite. So here goes the recipe!!


Vegan Pasta Parmesan


Ingredients:

  • 8 ounces pasta of your choice (such as spaghetti, fettuccine, or penne)

  • 2 tablespoons olive oil

  • 1 cup unsalted raw cashews

  • 1/2 cup nutritional yeast

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 cup water

  • 1/4 cup vegan parmesan cheese (optional)

Directions

  1. Bring a pot of salted water to a boil and cook the pasta according to the package instructions. Drain and set aside.

  2. In a blender or food processor, combine the olive oil, cashews, nutritional yeast, garlic powder, onion powder, salt, black pepper, and water. Blend until smooth and creamy.

  3. In a large saucepan over medium heat, combine the cooked pasta and the sauce. Stir to coat the pasta evenly.

  4. If using, sprinkle the vegan parmesan cheese over the top of the pasta. Serve hot.

Optional additions or substitutions:

  • You can add vegetables such as steamed broccoli or roasted cherry tomatoes to the pasta for added nutrients and flavor.

  • If you don't have cashews, you can use almonds or sunflower seeds instead. Just make sure to soak them in water for at least an hour before blending to soften them up.
